The “cake picnic” cake is a hazelnut praline crunch cake that I made for the Cake Picnic event hosted by Elisa Sunga in November for the Legion of Honor’s 100th Birthday in San Francisco!

The cake is a moist chocolate cake layered with 65% dark chocolate cremeux and a hazelnut praline I make and grind down in a melange that has milk chocolate and crispy feuilletine wafers folded in. It is covered in a 70% dark chocolate ganache, dark chocolate cremeux, and roasted hazelnuts.
